Katin Gin is a small-batch distillery made in the heart of the Yucatan by the distiller Roberton Brinkman. Roberto calls on his background of making mezcal and his proud Mexican upbringing. Now he is making gin from cenote water (an underground freshwater cave) and 17 botanicals that are traditional in Yucatan culinary traditions like chile habanero, chile xcatic, chile pais, china lima, lima yucateca, achiote, pimienta de Tabasco, cardamom, coriander seeds, rosemary, basil, vanilla, juniper plus a few others. Hardworking and humble his gin stands out and is incredible. He is also the owner of several of Merida’s up in coming bars. Following the story…I decided to spend the night visiting several of them to see firsthand how well his work mixes together.
